Valentino (of Gran Sasso and Vesevo) saw they had great vineyards and a good winery but were missing the necessary expertise to make wines the market required. Valentino and his team of young winemakers have taken the raw materials and transformed them into wines that people want to drink.
The vineyards for Vigneti Zabù were planted in 2005 on the hills around Lake Arancio in Sambuca di Sicilia. The crystal clear water creates an ideal microclimate for vine growing and protects the vines from the heat of Sicilian summers. The organic vines are low yielding.
2016 vintage was marked by a turbulent combination of heat waves and rain storms, which forced growers to monitor their fruit carefully and delay harvest. This flippant weather also reduced Sicily’s productivity by up to 20%, but it did not hamper the fruit quality and yields showed strong purity and concentration.
The best organic grapes were selected for the production of this wine. After a very long fermentation on skins to extract colour, body and aromas, the wine was pressed. 50% of the wine was aged in barriques and the other 50% in concrete tanks for about six months, where it underwent malolactic fermentation. The wine was then bottled to preserve the fruit flavours.
This Nero d'Avola is deep ruby in colour with a bouquet of red and dark fruits, hints of spice and a balsamic, eucalyptus quality. This is a full-bodied wine with well-balanced acidity and lingering black fruit and spice.
